ICOTW: Blueberry Pie-Wiches



I saw this recipe in a magazine last year and had been meaning to make it for MONTHS.  Then fall came and we really don't eat ice cream in the fall but I knew when I started again in this summer, that this would have to be one of the first ones I made.

In addition to posting ice cream and drink recipes on alternating weeks, I'm also trying to vary what recipes I post.  I know many people don't own an ice cream machine and the initial plunge, when you don't know if you will use it enough to make the money and space worth it, is daunting.  So I'm trying to switch up what I post about which is maybe good for you but not good for the contents of my freezer!  We have SO MUCH less ice cream in there than we usually do in mid-June!  That's what happens when I'm not making new ice cream recipes weekly!  It really is a problem.

I did make the ice cream for this recipe but you could very easily (easier) use store bought.  I also made the blueberry sauce but, again, you can used the canned stuff.  Basically all you'd need to make are the little puff pastries which basically require knowing how to use a cookie cutter and dusting on some cinnamon and sugar.  My 6 year old could make these if we let him use the oven on his own (writing that makes me think learning to use an oven safely is probably something a 6 year old could handle...going to have to think about that).

These were pretty quick to make, especially since I spread out components over multiple days.  These little bites do bake up to be VERY small.  Basically, you pop one right in your mouth.  Which I decided is a good thing because it seems like it would be VERY messy to try and bite one and then be holding the remaining half with ice cream oozing everywhere.  So bite size is good.  I ate all 4 pictures in the two minutes after taking these pictures.

They were delicious.  The ice cream adds plenty of sweetness and the baked pastries a nice touch of crunch with more added sugar.  And I rarely say no to blueberries in any form.  These were delicious.  I don't know how well they would hold up to making enough for more than one person because, as you see, I was losing blueberries and ice cream to some melting in the pictures.  But these were really good.

Blueberry Pie-Wiches
yield: 3-4 servings
Ingredients
-1 pint vanilla ice cream, softened (I have a recipe here, or use store bought)
-about 1/2 can blueberry pie filling (Pinterest has plenty of options for homemade)
-1 TB sugar
-¼ tsp cinnamon
-flour, for dusting
-½ of a 17.3oz package of frozen puff pastry (one sheet)
-1 egg, lightly beaten

Directions
1) Transfer the ice cream to a large bowl and add about ½ cup of blueberry pie filling and gently stir.  Put back in the freezer until firm, at least two hours.
2) Defrost the puff pastries according to the directions on the package.  Preheat the oven to 400°.  Combine the cinnamon and sugar in a small bowl.  Unfold the defrosted puff pastry onto a lightly floured surface and cut out rounds using a 3 inch circle cookie cutter.  Transfer to a baking sheet, placing at least 2 inches apart.
3) Brush the rounds with the beaten egg and sprinkle generously with the cinnamon & sugar.  Bake until puffed and a deep golden brown, about 10 minutes. (add 1-2 minutes if they aren't a perfect golden brown yet).  Transfer to a wire rack to cool completely.  Then split each round into two.
4) To assemble: scoop 2 heaping tablespoons of ice cream on the bottom of each split pastry round.  Drizzle with additional pie filling and top with the cinnamon and sugared top.  Enjoy immediately.
