Pepperoni Pizza Bites

We like pizza like any people with good tastes in food, but sometimes I just don't have the time or energy to make a whole pizza from scratch.  That's where these pizza bites come in wonderfully.  It's like a compact pizza taste that's cleaner to eat (depending on your dipping, I guess) and easy to throw together.  Matt requested these for his birthday a few years back, that's how much he likes them.  And Luke loves them too, easily eating a few every time we have them.  These are worth making, just for how easy they are to serve to him.  


Pepperoni Pizza Bites
yield: 24 pizza bites (mini muffin size)
Ingredients
3/4 cup flour
3/4 tsp baking powder
3/4 cup milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup cubed pepperoni
pizza sauce for dipping

Directions
1) Preheat the oven to 375°.  Grease a 24-cup mini muffin pan with a stick of butter.  Do not use spray oil.  We've had a lot of problems getting the muffins out cleanly unless we use a stick of butter. 2) In a large bowl stir together the flour, baking powder then add the milk, and egg.  Add in the cheeses and pepperoni and let sit for 10 minutes.
3) Stir the batter again and then divide among the muffin cups.  Bake for 20-25 minutes, until golden brown and a knife inserted in the center of one comes out clean.
4) Serve with the pizza sauce (warmed up) for dipping.

I made a double batch before surgery, freezing 3/4 of them and it worked great.   Let them cool initially and then froze in freezer bags.  To reheat we preheated the oven to 400° and put them in for about 10 minutes (obviously keep an eye on them).  The texture was much better than microwaving them.

Great idea! A pub near us serves these in place of a bread basket. I thought that was genius! I'm making these for the kids sometime. Although Paul will probably like them more.

Ohhh...I like that instead of a bread basket. I really wouldn't need an entree! Matt and Luke both love these. Which is wonderful because Luke has been an especially picky eater lately!
