Christmas treats: Crockpot Cinnamon Sugar Almonds

These are one of the easiest Christmas treats I make.  Even though they keep for quite awhile, I always save them to make Thanksgiving weekend since they make the house smell so good while decorating.  I like them.  Luke likes them.  You can pretend they are healthy-ish since they largely consist of almonds (and sugar but focus on the almonds).  Plus, there are always little sugar bits just to eat.  Not that I fish around the container just for those.  Nope.  I never do that. 


Crockpot Cinnamon Sugar Almonds
Ingredients
1 1/2 cups sugar
1 1/2 cups brown sugar
3 TB cinnamon
1/8 tsp salt
1 egg white
2 tsp vanilla
3 cups whole almonds
1/4 cup water

Directions
1) Mix together the sugars, cinnamon, and salt in a small bowl.  In a medium sized bowl mix the egg white and vanilla, stirring briskly until it is a little frothy.  Add the almonds to the egg white/vanilla  and stir until the almonds are coated.  Add the sugar mixture to the almonds and stir well.
2) Spray the inside of your crockpot with cooking spray or coat with oil.  Add the almonds and turn it on low.  Cook for 3-4 hours, stirring every 20 minutes.
3) After about 2 1/2 hours, add the 1/4 cup water and stir well.  Make sure you cook for at least another 40 minutes after adding the water; this will give the almonds a crunchy coating.  Spread the almonds on parchment paper to cool, breaking up as many clumps as you can.  Store in an airtight container.

Great idea about having these cook while decorating! I might steal that idea from you when we finally put our tree up this weekend!
