Mixed Drink Monday - Fruity Rum Fizzes

A couple weeks ago I posted a recipe for a Blackberry Rum Fizz.  It was delicious and gone in a few days (not all my new drink recipes can say that).  We both liked it.  When deciding what alcohol to pack for our recent Alabama trip I decided a few flavors of those would be really easy and cheap and wouldn't take up too much space (which is at a premium when traveling!)  Plus, they are rum drinks which are just made for the beach, right??  This plan worked rather well and we were able to enjoy many drinks without turning on a blender or packing a whole lot of bottles.  Matt did pick up a 6 pack of canned beer which turned out to be $11 and smelled like cigarette smoke.  It tasted gross.  That was not a good experiment.  These were.

Fruity Rum Fizzes
yield: about 5 drinks each 
Ingredients
-6 ounces fruit (fresh or frozen, washed and hulled/pitted as appropriate)
-1/2 cup sugar
-1/2 cup water

-1/4 cup rum
-3/4 cup sparkling water
-2TB fruit syrup

Directions
1) Combine the fruit, water, and sugar in a small saucepan over low heat for about 30 minutes, stirring about every 5 minutes, crushing the fruit as you go.  Let cool then strain through a fine mesh sieve.  Refridgerate until ready to use.

2) Combine rum, sparkling water, and fruit syrup in a glass.  Add ice if desired.  Enjoy!

Our Thoughts
We obviously like these since this is a remake.  If we had to pick a favorite flavor of these I'd probably say strawberry but they are all delicious.  Definitely a good drink for our vacation.  I enjoyed many of these while Luke was sleeping, often with a good book or Matt nearby.  Happy vacation memories.
