ICOTW: Strawberry Coconut Milk Popsicles

 

 

Last summer, some of my most popular ICOTW posts were the ones for no-churn ice cream.  In fact, this one has more than double the views of any other ice cream post I've written.

BUT...those weren't among my favorites to eat.  I much prefer the texture that comes from actually churning ice cream (although I think I need to remake that one as churned ice cream because then I'm pretty sure I'd love it).  I get it, it's a commitment to buy an ice cream machine and then commit to figuring out how to use it to make it worthwhile (both in money and cupboard space).  Before I started this weekly summer project I had only used ours a dozen times in ~8 years.  Now I easily use it at least a dozen times a summer.

So, since I'm not a big fan of no-churn recipes yet I want to keep writing these posts that would be helpful to people...I'm going to try to do more popsicle recipes.  Because buying a popsicle mold is much more do-able and approachable.  That's not sarcasm, that's a fact.   You can throw pretty much anything in a popsicle molds (for a long time I was doing leftover smoothies which was a perfect treat for 1 year old Luke).

We have a couple different kinds of molds, these being the most recent ones I've bought.  Back last summer when we couldn't eat them as fast as I was making them.  Let me tell you, running out of freezer space because you've made so much ice cream and so many popsicles?  That's a good problem to have.

As for these popsicles, they are super easy (as pretty much all popsicles are), pretty healthy (if you are looking for that in a frozen treat), and have a great summer-y taste.  Fresh strawberries are one of those quintessential summer flavors.  Throw in coconut (which I also love) and it's pretty much summer in popsicle form!  What more could you want?

(Besides chocolate, I always want chocolate.  But it's not wise to eat that 24/7.)

One year ago: Chocolate Chip Cookie Dough Ice Cream
Two years ago: Raspberry Crisp Ice Cream
Three years ago: Strawberry Pretzel Ice Cream Pie
 

Strawberry Coconut Milk Popsicles
yield: depends on mold size, I got 10
Ingredients
-2 cups fresh strawberries, washed and hulled
-1 14-oz can coconut milk
-3 TB honey

Directions
Put all ingredients in the blender and blend until pretty smooth, some strawberry chunks are fine.  Pour into mold and freeze until solid!  May help to run molds under warm water to loosen the popsicle before eating!
